It is autumn here in the Pacific Northwest – the leaves are changing to beautiful colors of orange, yellow, and redπŸ‚.

The temperature has started to drop in to the 50’s and 60’s and the trees are prepping for the winter. Soon the leaves will all be falling, and the trees will be bare. They will begin their chill hours which will accumulate throughout the winter.

Cherry trees, depending on variety, need at least 700-800 hours at temperatures below 45 degrees in order to set fruit for the next seasons crop.

Here's a fun way to use those preserved cherries - a fun cockail (or mocktail)! Here's a festive one to try.

πŸ’ Cherry-Orange Whiskey Smash πŸ’

Ingredients:

2 oz whiskey (bourbon or rye work well)
1 oz fresh cherry juice
1/2 oz simple syrup (adjust to taste)
2 dashes Angostura bitters
Orange peel (plus extra for garnish)
Ice cubes
Fresh cherries and a sprig of mint for garnish (optional)
Instructions:

In a cocktail shaker, add the cherry juice, simple syrup, and bitters.
Take an orange peel and gently twist it over the shaker to release the oils, then drop it into the shaker for an added burst of citrus flavor.
Add the whiskey and a handful of ice cubes to the shaker. Shake well for about 10-15 seconds until the mixture is chilled.
Strain the mixture into a rocks glass filled with ice.
Garnish with a fresh orange peel twist, a cherry, and a sprig of mint if desired.

It's a good day to brandy some northwest cherries and enjoy them on top of ice cream - it's #NationalBrandiedFruitDay!

2 pounds Northwest fresh sweet cherries, stemmed and pitted
2 cups sugar
1 quart brandy

Combine cherries, sugar and brandy; mix well.  Store in tightly covered jar in a cool place for 6 or more weeks.  Makes about 1 1/2 quarts.

Usage Tips:

- Serve over ice cream
- Dress up cheesecake with a spoonful of cherries
- Top flan with brandy and cherries
- Spoon cherries over pound cake and tip with whipped cream or cream fraiche
- Combine with fruit in season and serve with special cookies
- Dress up bread puddings with a topping of brandied cherries
- Add to your favorite chocolate cake or brownie batter

For elegant holiday gift giving, portion Brandied Cherries into bottles or canning jars.  Store in a cool dark place.  Cover lids with holiday wrapping or fabric, tie with a ribbon and give to those special friends.
