Dried Cherry Overnight Oats

Make mornings easier with this simple, hearty breakfast. Overnight oats can be prepared the night before, or they can be made as a larger batch to prep for the week ahead, allowing for individual grab-and-go servings. These convenient jars are packed with flavor thanks to the addition of dried cherries and a touch of almond extract. The sweetness can be adjusted, and the toppings can be customized for the perfect breakfast to suit your needs.
Ingredients
- 2 cups rolled oats
- 4 tbsp chia seeds
- 1 1/2 cups milk
- 2 tsp pure almond extract
- 4 tbsp pure maple syrup
- 1/2 cup dried cherries, roughly chopped
Instructions
- In a mixing bowl, combine the oats and chia seeds and stir to combine.
- Add in the milk, almond extract, and maple syrup. Stir to combine until uniformly mixed.
- Using a 1/4 measuring cup, divide the oats mixture amongst 4 small jars, adding a layer of dried cherries in between scoops. Top with remaining dried cherries
- Seal the jars and transfer them to the fridge. Let the oats sit in the fridge overnight, or at least for 6 hours, before serving.
- Serve on their own, or top with Greek yogurt, additional dried cherries, and sliced almonds.

Chocolate Cherry Smoothie

- 1 cup unsweetened almond milk (plain or vanilla)
- 2 tbsp raw cacao powder (cocoa powder is ok too)
- 1 tbsp chia seeds
- 1 scoop protein powder (plain or vanilla) or Greek yogurt

Whole Wheat Scones With Fresh Cherry Compote

Ingredients
Fresh Cherry Compote:
- 1 lb fresh cherries, pitted
- 1 tbsp sugar
- 1 tbsp water
Whole Wheat Scones:
- 2 cups whole wheat flour
- 1/2 cup brown sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 8 tbsp unsalted butter, cold
- 1 egg
- 4 tbsp Greek yogurt
- 3 tbsp cold milk
Instructions
Fresh Cherry Compote:
- Combine the fresh cherries, sugar, and water in a small saucepan. Bring the mixture to a boil over medium heat. Once boiling, reduce the heat and simmer the mixture, uncovered, until slightly thickened. Simmer about 10 minutes, stirring frequently. Mash the cherries with a fork if desired.
Whole Wheat Scones:
- Whisk together the whole wheat flour, brown sugar, baking powder, and salt in a large mixing bowl.
- Using a cheese grater, grate the cold butter into the dry ingredients. Mix with a fork, wooden spoon or spatula until the butter is incorporated.
- Mix in the egg, Greek yogurt, and milk. Transfer the mixture onto a well-floured countertop.
- Knead the dough with your hands, folding multiple times in the process. Work in enough flour so it’s not sticky to touch.
- Form the dough into a circle. Cut the circle into 6 equal-sized triangles. Place the scones on a baking sheet lined with parchment paper.
- Preheat the oven to 350 degrees. While the oven preheats, place the baking sheet in the freezer to allow the scones to chill.
- Once the oven has preheated, brush the tops of the scones with milk. Sprinkle with sugar if desired. Bake for 22 to 24 minutes until golden.
- Serve warm scones with fresh cherry compote.

Chocolate Cherry Parfaits

Ingredients
- 1 cup (6 sheets) crushed graham crackers
- 1/2 lb cherries, pitted and chopped
- 2 cup non-fat Greek yogurt
- 2 tbsp cocoa powder
- 2 tbsp mini chocolate chips, optiona
Instructions
- In a bowl, combine the Greek yogurt and cocoa powder. Use a spatula to mix until smooth and well combined.
- Set up a station with 3 small jars. Add 1/4 cup of the graham cracker crumbs to each jar. Top with 1 tablespoon yogurt and chopped cherries.
- Divide the remaining graham cracker crumbs amongst the 3 jars.
- Add additional yogurt and chopped cherries on top. Garnish with mini chocolate chips and a fresh, whole cherry if desired.

Baked French Toast with Cherry Topping

Ingredients
- 1 1/2 cups milk
- 6 eggs
- 1/3 cup maple syrup
- 3 tbsp sugar, divided
- 1 tbsp orange peel, grated
- 1/8 tsp salt
- 8 slices french bread
- 4 cups Northwest Cherries, pitted and halved
- 1/2 cup orange juice
- vanilla yogurt
Instructions
- Combine milk, eggs, maple syrup, 2 tablespoons sugar, orange peel, and salt; mix well. Pour half of mixture into each of two 9-inch square baking dishes. Dip both sides of each slice of bread in milk mixture; arrange in the same baking dish. Cover with plastic wrap and refrigerate overnight. Marinate cherries in orange juice and remaining 1 tablespoon sugar overnight. Carefully transfer slices to a nonstick, buttered baking sheet using a large spatula; allow excess liquid to drip into pan used for soaking. Bake in a preheated 400°F oven 15 to 18 minutes; turn slices over halfway through baking time. Top each slice with 1/2 cup cherries and a dollop of vanilla yogurt. Serve immediately.
